Oven Roasted Chicken Leg Quarters with Prune and Mushroom


Ingredients:

  • 4 chicken Leg Quarters
  • 2 potatoes, thickly sliced
  • 1 onion, thinly sliced
  • 1 tomato, cubed
  • 1 garlic clove, minced
  • 2 Tbls (42 gr) raisins
  • 5 pitted prunes
  • 210 gr mushroom, sliced
  • 1 Tbls (12gr) powder mushroom soup, MSG free
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ tsp ground cinnamon
  • ½ tsp paprika
  • ¾ cup white wheat flour
  • 1 ½ Tbls olive oil
  • 1 cup water
  • Pour flour into a deep bowl and dip in the chicken quarters covering all sides.
  • Heat one spoon olive oil in a non-stick skillet and fry chicken quarters for one minute on each side. Put chicken quarters in a casserole dish and add the potatoes.
  • Add another ½ Tbls olive oil to the skillet to fry onions and garlic. Stir in tomato, mushrooms, raisins, prunes, mushroom soup powder and remaining seasoning. Stir in 1 cup of water and cook for 5 minutes.
  • Pour mixture over chicken quarters and potatoes, cover casserole dish and put in a preheated oven to 180c and cook for one orologi italia replica and a half hour.
